Also if left, some of the weeds are so invasive like the ivy, they end up strangling the vines.&lt;/p&gt; &lt;p class=&quot;spip&quot;&gt;We stick with our philosophy that we need a soil that is alive in order to produce a great tasting wine. Alive with insects and alive with plants - even though some are not necessarily beneficial to the vineyard. But, being close to the vines when we hoe, allows us to see the insects and to act accordingly instead of not having any at all. Those pesky escargots that are having an absolute feast on the buds are picked off by hand and are given to a local organic snail grower.&lt;/p&gt; &lt;p class=&quot;spip&quot;&gt;Joseph will pass ahead in the caterpillar with a claw attached to it and loosen the grass, weeds and invasive plants. We follow close behind while the soil is freshly tilled and clean up around the vine using our hoes. We use a great deal of force to hoe deep enough to get the roots out, and at the same time accurate enough so we don't hoe the stump as the little buds will pop right off. Joseph then re-passes in the rows with the tractor to till the soil. This will help the uprooted and upside down weeds to decompose and create natural compost. This also prevents the soil from being compacted, so the roots grow deeper and when it rains, the soil will absorb the water and pevent soil erosion.
We now have 7 hectares of vineyards and they are all in the approximity of 10kms. By hoe-ing we see the different terroirs &#8211; the soils and the rocks which make the wines so distinctly different from each other. From the sandy Savennieres to the rocky La Fresnaye parcel, each day working in the vineyard we see many different aspects besides the vines.&lt;/p&gt; &lt;p class=&quot;spip&quot;&gt;Remember the gloves when hoe-ing to avoid calluses ! Quelques semaines avant les vendanges, l'Anjou a eu 30 mm de pluie en une semaine. Cette pluie &#233;tait n&#233;cessaire pour faire murir les raisins.&lt;/p&gt; &lt;hr class=&quot;spip&quot; /&gt;
&lt;p class=&quot;spip&quot;&gt;Nous avons commenc&#233; la vendange 2009 sur la parcelle de la Fresnaye le 29 septembre. Le Chenin Blanc avait un potentiel de sucre de 13.5&#176;. Cette mesure est importante, nous la contr&#244;lons continuellement tout au long des vendanges pour surveiller la maturit&#233; des raisins. Nous choisissons les dates de la r&#233;colte quand les raisins sont m&#251;rs mais le potentiel d'alcool ne doit pas &#234;tre trop haut. Donc le 29 septembre, notre nouvelle &#233;quipe a commenc&#233; les vendanges.&lt;/p&gt; &lt;p class=&quot;spip&quot;&gt;Ensuite nous avons transport&#233; les raisins au ch&#226;teau La Fresnaye et avons vid&#233; les caisses dans le pressoir. Nous pensons qu'il faut ne pas presser trop dur et trop rapidement la vendange, donc nous commandons le pressoir manuellement, le jus s'&#233;coule goutte &#224; goutte dans une maie puis nous le pompons vers une cuve.&lt;/p&gt; &lt;hr class=&quot;spip&quot; /&gt;
&lt;p class=&quot;spip&quot;&gt;La vendange suivante &#233;tait aux Treilles. Monter et descendre en choisissant seulement les raisins bien m&#251;rs pour faire le vin sec. C'&#233;tait le premier tri des quatre fois que nous trierons aux Treilles. Les tris suivants nous choisirons les raisins avec le botrytis cinerea pour faire un vin de liquoreux. &#201;tant impossible de descendre avec une caisse pleine de raisins, nous &#233;tions contents d'avoir Joseph avec le tracteur &#224; chenilles pour vider nos seaux. Nous avons eu un temps agr&#233;able pour les quatre tris des Treilles, le soleil brillait et une petite brise nous soulageait dans notre escalade, &#224; chaque fois nous sommes r&#233;compens&#233;s par la vue spectaculaire des vignes avec ses couleurs d'automne. Une bonne respiration profonde avant la descente.&lt;/p&gt; &lt;hr class=&quot;spip&quot; /&gt;
&lt;p class=&quot;spip&quot;&gt;Savenni&#232;res a eu des conditions parfaites. Les raisins &#233;taient jaunes dor&#233;s, belle maturit&#233;.
Nous fermentons et &#233;levons tous nos blancs secs dans des barriques de ch&#234;ne. Une fois que les barriques sont align&#233;es nous les remplissons par gravit&#233;.&lt;/p&gt; &lt;hr class=&quot;spip&quot; /&gt;
&lt;p class=&quot;spip&quot;&gt;Dans le m&#234;me temps nous avons re&#231;u nos raisins de n&#233;goce. Nous sommes heureux d'annoncer que l'Anjou blanc 2009 sera enti&#232;rement en culture biologique. C'est un assemblage de terroir de schistes et de calcaire, il fermente moiti&#233; en barriques et moiti&#233; en cuve tronconique de ch&#234;ne. Nous les assemblerons avant la mise en bouteilles.&lt;/p&gt; &lt;hr class=&quot;spip&quot; /&gt;
&lt;p class=&quot;spip&quot;&gt;Avec les vignes de La Fresnaye, de Chinon et de Bourgueil, nous avons vinifi&#233; les raisins de Cabernet Franc. Dans toutes nos vignes et dans les raisins que nous avons achet&#233;s nous avons eu une grande maturit&#233;. Les raisins rouges fermentent approximativement 3 semaines. Apr&#232;s nous pressons les raisins lentement pour extraire le jus mais pas trop pour ne pas extraire trop de tannins. &lt;p class=&quot;spip&quot;&gt;Le Botrytis cinerea &#233;voluait merveilleusement sur les raisins qui avaient &#233;t&#233; laiss&#233;s. Le Botrytis est un champignon, une &#171; moisissure &#187; qui pompe l'eau des raisins, concentrant le sucre des raisins, mais aussi les acides de fruits et le min&#233;ral. Nous cherchons &#224; concentrer autour de 18&#176; potentiel pour la Fresnaye et 22&#176; pour Les Treilles et Quarts de Chaume.
Les peaux des raisins sont plus fragiles avec le botrytis, nous avons donc d&#233;cid&#233; d'utiliser une presse verticale. Le pressoir verticale est beaucoup plus doux sur les raisins mais possible que pour un petit volume. Par exemple, aux Treilles nous avons 320 litres et en Quarts de Chaume seulement 170 litres. Les Treilles fermente en barriques et bonbonnes de verres, le Quarts de Chaume fermentent uniquement en bonbonnes de verre.&lt;/p&gt; &lt;hr class=&quot;spip&quot; /&gt;

The drought allowed the roots to grow deeper in search of alternative water sources. This in turn allows for the true nature of the taste of the terroir to exhibit in our wines. A few weeks prior to the harvest, the Anjou area had 30mm of rain fall in approximately one week. This rain was needed to give the grapes the juice which will eventually be transformed into delicious wine.&lt;/p&gt; &lt;hr class=&quot;spip&quot; /&gt;
&lt;p class=&quot;spip&quot;&gt;We started the 2009 harvest at La Fresnaye on 29 September. The Chenin Blanc was measuring at 13.5&#176; sugar / alcohol potential. This important measurement is practiced continually throughout the season to monitor the grape maturity in the vineyards. We choose the harvest dates when the grapes are mature but the alcohol potential not too high. So on 29 September, with our new picking crew we started the harvest. After picking the grapes we transported them to Ch&#226;teau La Fresnaye and emptied the cases into the press. We believe in not stressing the grapes by pressing too hard too quickly, so armed with a glass of 2008 wine in our hands we manually controlled the press for the rest of the night. We generally press the grapes twice allowing for the juice to trickle through the rest of the grapes onto the pan which we will then pump through to a tank.&lt;/p&gt; &lt;hr class=&quot;spip&quot; /&gt;
&lt;p class=&quot;spip&quot;&gt;Next harvest was Les Treilles. Climbing and descending selecting only the maturist of the grapes for making dry wine. Nous soulevons les fils tous ensemble et sautons de rangs en rangs. There are 3 wires connected to the posts. The lowest wire is at about 50 cms from the ground to keep the base of the vines standing up straight. We then have 2 wires which can be moved up during the growing season. By tucking the vines between these wires we control the fast growing vine. The French word for this is palissage. The closest I could get to English is training vines on wire. At Les Treilles we were reminded of the team that Pithon-Paill&#233; is. Jo at the top of the mountain, followed by me and then Isabelle and finally Joseph at the bottom, we lifted the wires together. Moving from row to row we finally controlled the vines on Les Treilles.&lt;/p&gt; &lt;hr class=&quot;spip&quot; /&gt;
